What are the Origins of Fish Tacos?
Though you may associate the 1950’s with milkshakes and burgers, that is the decade Baja fish tacos were born.
The popular dish was invented in Baja California, a state in Mexico. Baja California is a peninsula bordered by the Pacific Ocean and the Gulf of California. Fish delicacies make sense coming from here.
While Mexicans did originally fill tacos with fish, immigrants taught Mexican locals how to deep fry fish. The common fish taco as we know it today, was born out of this collaboration.
Fish tacos originated in the state of Baja California, but the cities of Ensenada and San Felipe debate to this day over which is the original city.
Fish tacos have come a long way from Baja California in the 1950s. Now, they are a popular dish enjoyed all over the world.

Fish of the Day Flavor Profiles
Not only does a variety of fish options help the environment, but it also gives you something exciting to try each day!
We usually rotate between offering Mahi Mahi, Atlantic salmon, steelhead trout, ono, and escolar. Each fish has a delicious and unique flavor profile.
- Mahi Mahi has a mild, sweet flavor profile. It features moist flakes and a moderately firm texture.
- Atlantic salmon has a milder taste than Pacific salmon. It has a smooth, melting texture.
- Steelhead trout has a delicate and flakey texture. It has a mild, “non-fishy” taste.
- Ono, or wahoo, is a Hawaiian word meaning “good to eat.” It is mildly sweet and has large circular flakes.
- Escolar has a silky texture and a rich, succulent flavor. It is highly flavorful!
